- 1 whole chicken
- 2 teaspoons of turmeric powder
- 1 kg rice
- 1 tablespoon of minced garlic
- Herbs: mint leaves, Vietnamese coriander.
- 200g mixture of papaya and carrot, shredded into strands
- 100g Hoi An chili sauce
- soy sauce
- Lemon juice and some lemon leaves
- Spices: fish sauce, sugar, seasoning powder, salt, pepper.
Boil chicken with a teaspoon of turmeric powder and some lemon leaves. When the chicken is cooked, take it out of the water and let cool. Shred or chop the chicken into small pieces.
Wash rice and let dry.
Heat a little cooking oil in a pan and stir in garlic until it turns golden. Add the rice and fry with some chicken broth and a teaspoon of turmeric powder. Mix well.
After frying the rice, remove from heat. Put rice into a cooker, then pour in chicken broth until it reaches a half knuckle of your finger. Add 1 tablespoon of the seasoning powder (optional), mix well and cook.
The best way to boil a chicken
For a flavourful chicken, it should be moderately cooked, the skin smooth and shiny without cracks.
Put the chicken in a pot and fill with cold water to cover the chicken. If you put the raw chicken into boiling water, it won’t be thoroughly cooked inside and the skin will easily crack. If the chicken is frozen, defrost completely before boiling.
When placing chicken in a pot, keep the belly turned downward. Choose a medium pot, not too big or too small.
When the water has boiled for about five minutes, turn down the heat. If the water continues to boil, the meat in the thighs will shrink and the skin will crack. Continue to cook on low heat for about another five minutes and then turn off the heat. Cover and keep the chicken in the pot for another 20 minutes.
Check whether the chicken is cooked by using a chopstick to prick the meat. If it easily penetrates and the water that comes out is clear, not have a pink colour, then the chicken is ready.
Put rice on a plate with the shredded or chopped chicken mixed with the herbs, a little salt and lemon juice.
Add shredded papaya and carrot mixed with a little soy sauce and chili sauce.
